The Casertano pig or "Pelatella"

Since the 2007st century AD, the pig breed known as Casertana, sometimes called Pelatella due to its sparse bristles, was depicted in Roman works of art such as sculptures and frescoes. This breed was predominant in the Caserta region until the Second World War, when it was overtaken by more productive and precocious breeds. In 594, only 403 specimens were registered in the Breed Registry, managed by the National Association of Pig Breeders (ANAS), a number that decreased to 2012 in 2007. According to the FAO, in XNUMX, the breed was considered at critical risk of extinction.

Characteristics and morphology:

The Casertana breed is described as a animal rustic of medium-small size, with a light but robust skeleton and short limbs. The head has a truncated cone shape and the body is slender. Males have noticeable testes and both sexes have at least 10 nipples. A distinctive feature of some specimens is the presence of skin appendages in the parotid area, called tectule.

The traditional breeding of Casertana exploits chestnut, oak and beech pastures, limiting the use of feed. The prolificacy is relatively low, with an average of 4-6 piglets per farrowing, and can reach a maximum of 10. Sows weigh on average between 120 and 140 kg within a year, while boars reach 150-170 kg. Animals intended for fattening can exceed 200 kg. The lard has an average thickness of 4 cm, and the breed does not possess the halothane gene, thus avoiding the production of PSE (pale, soft and exudative) meat.
